LOWFAT PINEAPPLE ANGEL FOOD CAKE

                          
    
     Happy Easter!!! Here's another Pinterest find - from Laurie at http://cookinupnorth.blogspot.com/ and I couldn't believe it would actually be good if it was that easy.  IT WAS!!!  Dude, if ya need somethin' quick for anything - a church function, Easter, or just something yummy to munch on, this is IT! It's light and refreshing and you don't feel guilty about eating it, either.  I've heard of mixing various pie fillings in with the cake mix instead of pineapple, so you can try that too if you like. 

Ingredients:
  • 1 box angel food cake mix
  • 1 15 1/2 oz. can crushed pineapple (with juice)
Directions:
  1. Combine cake mix and canned pineapple, pour in ungreased 9x13 glass dish.
  2. Bake in a preheated 350 degree oven for 25-30 minutes.


THAT'S IT!!!!  WHOA!!!  Now let's go hide some Easter eggs!!!

  1. Ooh that does look yummy!! I guess you could just add crushed pineapple to normal sponge batter and it would work the same way, wouldn't it?

  3. Do u just add the can to the box or do u make the batter then add the pinapple without the juice?

    1. Hi! Just add the can, juice and all, to the box mix. Don't make the batter like the box instructions say. Two ingredients - YAY!

  4. I only found 20oz cans of crushed pineapple instead of the 15.5oz. I have found the 20oz can on other sites for this same recipe as well. I hope it works because its in the oven now with 20oz. I'm sure it wont matter...

  5. Made this tonight for my daughters going away cake for school, just licking the batter off the spatula was delish!! Topping it with real whipped cream, should have gotten some coconut though. So simple!

  6. The picture shows an angel food cake mix..you stated pineapple cake mix...which is it please?
